  1. Prepare the Apples

    Peel, core, and chop the apples into small chunks. Smaller pieces cook more quickly and evenly.

  2. Place the chopped apples in a medium saucepan. Add the water, and if desired, stir in the honey or maple syrup and cinnamon. Cover the pan and cook over medium heat.

  4. Remove the pan from the heat. Mash the cooked apples with a fork or potato masher for a rustic texture, or blend them using a hand blender for a smooth consistency. Stir in the vanilla extract, if using, and set aside to cool completely.
